1Place the vegetable stock into deep pan over medium-high heat.
2Add all the remaining ingredients, except the peanut butter and coriander and cook for 15 minutes, stirring occasionally.
3Take about two ladles of liquid and place it into a small bowl.
4Add the peanut butter and stir until thick.
5Return the mixture to the pot, stir well, and cook for 10 minutes.
6Add the cilantro and stir well.
7Garnish with the peanuts before serving.
