Black beans are high in fiber and also contains Thiamine which is known as Vitamin B1. Thiamine is immune system booster and also used for maintaining a positive mental attitude. It's essential through the pregnancy for your baby's brain development. It aids the normal functioning of your nervous system, muscles, and heart.

1Heat the olive oil over medium heat in a large soup pan.

2Add the onions, garlic cloves and carrots and cook, stirring occasionally, until onions are soft and not brown.

3Add the black beans, veg broth, oregano, coriander, cumin, cayenne pepper and salt and bring to a boil.

4Reduce the heat, cover and simmer gently for about 15 minutes.

5Stir in the lime juice and season with salt and pepper to taste.

6As a topping use chopped tomato with onion and cilantro leafs or add sour cream.


2 tbsp olive oil

2 red onions, roughly chopped

3 garlic cloves, crushed and peeled

2 carrots, peeled and roughly chopped

2 cans black beans, drained and rinsed

1l veg broth

1 tbsp oregano

1 tbsp ground coriander

1/2 tbsp ground cumin

1 tbsp cayenne pepper


2 tbsp lime juice

sour cream

chopped tomato

chopped onion
