1In a large deep pan heat the oil and stir in the chopped onion. Cook and stir until the onion is slightly golden.
2Add the broccoli, apples and frozen peas followed by the veg stock.
3Bring to the boil, cover and simmer for about 20 mins. The apples and broccoli must be soft before you switched it off.
4Cool the soup a bit and the use the hand blender to make the soup smooth.
5Use the ground black pepper and salt to taste.
