1Peel off the yam, cho cho, carrots, onions, potato and chop them.
2Chop mutton into bite-size pieces, add to a large saucepan and fill with enough water to cover the meat plus a bit extra.
3Bring to the boil, scum will now surface, remove this with a spoon.
4Add scotch bonnet pepper and pimento seeds. Reduce heat to a simmer, cover and cook for 2 and a half hours or until the meat falls off the bone.
5For last half hour of cooking add the chopped veg and all the other ingredients.
