Directions

1Heat the oil in a large pan, add the carrots, celery and leek. Saute over a medium heat for 4 mins. Add the stock, pearl barley and chicken.

2Bring to the boil, then cover and simmer for 20-25 mins or until the pearl barley and carrots are tender.

3Stir in the parsley and season to taste.

Ingredients

2 tbsp vegetable oil

2 carrots, peeled and sliced

1 leek, cleaned and sliced

1l chicken stock

2 cups of cooked pearl barley

150g cooked chicken, broken into bite sized chunks
