Enjoy this chicken and leek soup with some crusty whole grain bread.

Directions

1Heat oil in a large pan. Sauté onions, leeks, carrots and celery pieces until leeks and onions are softened.

2Sprinkle herbs and cook for 1 minute or until fragrant.

3Stir in chicken; add chicken broth and water.

4Bring to a boil, then simmer for 20 minutes.

2 tsp olive oil

1 cup finely chopped sweet onion

2 leeks

1 carrot, chopped

1 celery stalk, sliced

2 tsp fresh thyme

1 tbsp chopped fresh parsley

3 pcs skinless chicken breast

6 chicken broth

2 cups water
