1In a pot, heat oil over medium heat. Add onion, celery and garlic. Cooking, stirring frequently, until vegetables are aromatic and glossy, about 5 minutes.

2Add stock. Simmer until vegetables are tender, about 10 minutes. Add chickpeas, dill and lemon juice.

3Season with salt and pepper.


1 tsp olive oil

1 onion, diced

2 celery stalk, diced

3 cloves garlic, peeled, minced

500ml veg stock

1 tin chickpeas, rinsed, drained

1/4 cup chopped fresh dill

juice of 1 lemon
