This dish can be cooked as a stew or a soup. Depends how much liquid you add. Both options are delicious though. Stew option goes nicely with a boiled rice.

1In a deep pan, cover the ham hocks in water, bring to a boil. Reduce heat, and let simmer over low heat for 2,5 to 3 hours.

2In a different large deep pan bring the beans in a water to a boil. Let it simmer for 50 minutes. Remove from heat and keep aside.

3Cook the chopped onion and diced bacon and chorizo until lightly browned then add the garlic and cook for another 30 seconds.

4Add the whole mix into the pan with the cooked beans. Add the ham hocks diced, the ribs, the beef jerky, bay leaves, all the seasonings and spices, vinegar and orange juice to the beans.

5Add 1-2 cups of water of water, depends how thick the soup you wish to be done. Cover and let simmer over 1 hour.

6Remove the bay leaves once you finish cooking. When you serve sprinkle the chopped cilantro or parsley on the top. You can also add slice of fresh orange and chopped chilli peppers on the top.


400g black beans, soaked overnight and drained

1l water

3 smoked ham hocks

5 slices of smoked bacon

2 tbsp olive oil,

1 sausage (such as chorizo or italian salami style)

1 onion, chopped

4 garlic cloves, minced

500g pork ribs, cut

100g beef jerky

4 -5 bay leaves

ground black pepper


ground coriander

1 tbsp of red wine vinegar

100ml of fresh orange juice

fresh cilantro or parsley chopped


chilli peppers
