Directions

1Melt the butter in a large pan over medium heat.

2Add the chopped fennel bulbs. Cook and stir until golden brown, about 10 minutes.

3Pour in the broth, and simmer until fennel is tender, about 15 more minutes.

4Use the hand blender to liquidise the soup. Pour the cream and stir.

5Add salt and pepper to finish the taste.
