Directions

1Heat the oil in a large soup pot over medium low heat. Add celery, garlic, onion, and carrots. Cook for 10 minutes or until the veg is soft.

2Add thyme, then the stock and bring it to a boil. Cook for 5 mins.

3Add the gnocchi and cook until the gnocchi start to float, then taste for seasoning.

4Add salt and pepper.

olive/sunflower oil

stalks celery, finely chopped

4 garlic cloves, minced

1 spring onion, finely diced

2 carrots, grated

pinch of dried thyme

salt and pepper

6 cups vegetable

1 cup of potato gnocchi
