Not everyone loves sprouts but who does will love this easy make soup.

1Place the sprouts, potato, shallot, peas, spinach and garlic in a saucepan. Pour over the veg stock and simmer for 15-20 minutes.


3Add salt and freshly ground black pepper. Liquidise in a blender.

4To serve, pour into a warm bowl and garnish with parsley or chive.


100g sprouts, trimmed and shredded

large cooked potato, finely chopped

1 shallot, roughly chopped

100g peas

100g spinach

1 clove garlic, roughly chopped

200ml hot veg stock

salt and freshly ground black pepper

sprig parsley, to garnish
