1Heat the oil in a deep pan.
2Add the onion and fry until its slightly golden.
3Add garlic and carrot to the pan, and cook it for cca 2-3 mins and stir.
4Add the lentil and stir. Let it cook for about 1 min.
5Pour in the veg stock then cover the pan and cook over a medium heat for about 25-30mins or until the lentils are tender. Sprinkle with the cumin.
6For last 15 mins of cooking add the potato.
7If you like the soup thicker, you can use thickening powder or make your own by using flour and water and stir in cca 2 mins before you finish the soup.
8Take off the heat and stir in the parsley.
