Directions

1Heat the canola oil in a deep sauce pan. Add garlic and lemongrass. Cook and stir until fragrant for cca 20-25 seconds.

2Pour in the broth and two cups of water. Bring it to a boil.

3Add pork stripes and cook until the its cooked through, cca 6 mins.

4Stir in the noodles, spinach, soy sauce and sesame oil and let it cook for next 3 mins.

5Serve to the bowls and sprinkle the dry coconut on the top.

Ingredients

250g thin boneless pork chops, cut into stripes

2 tbsp canola oil

2 garlic cloves, minced

1 tbsp dried lemongrass

600ml veg/chicken stock

1 pack of noodles (udon/rice), pre cooked

3 cups of baby spinach

1 tsp of sesame oil

1 tsp soy sauce

dry coconut for the garnish
