This rich chicken soup full of the flavours and is filling.

1Cut chicken breasts into small pieces.

2In a deep pan, saute chicken and onion in olive oil until the onion is slightly golden.

3Add all the remaining ingredients, occasionally stir and simmer for 10 to 15 minutes.

4Serve with the cheddar cheese on the top and with fresh coriander.


2 chicken breasts, boneless skinless

1 onion, chopped

3 tbsp olive oil

1 can black beans, drained

green chilies

1 tbsp of red pepper flakes

1 can of corn, drained

1l of chicken broth
