1Heat the oil in the deep pan. Add mushrooms, peppers, garlic and ginger and cook 3-4 mins, stirring occasionally. Add lemongrass and cook another 1 min.
2Add Chicken Stock, coconut milk, fish sauce, and sugar, bring to a simmer.
3Add chicken to pan and cook 1-2 minutes or until thoroughly heated.
5Top with onions, cilantro, and juice.
