It has nice sweeter taste from the sweet potato. The beans are good source of protein. It worths to try.

1Heat oil in a pan over medium heat. Add onion and garlic. Cover and cook 5 minutes or until tender.

2Place onion mixture in a 5-quart electric slow cooker. Add sweet potato and other ingredients. Cover and cook on low 8 hours or until vegetables are tender.

3Add peanut butter and stir well with a whisk. Use the hand blender and mix until smooth. Add pinch of salt and pepper.


2 tsp olive oil

2 chopped red onions

1 garlic clove, minced

4 cubed peeled sweet potato

1 cup cooked red beans

1l vegetable broth

1 cup water


ground cumin

grounded black pepper

3 tbsp peanut butter
