1In a large saucepan, combine chicken broth, celery, carrot, onion and garlic. Bring to a boil and cook for 25 mins or until the root veg is soft.

2Then put mushrooms and cook for another 5 mins.

3In a small saucepan, melt butter and stir in flour until smooth and thick. Gradually whisk in broth mixture.

4Cook and stir for 2 minutes or until thickened.

5Whisk in the cup of white wine and stir.

6Add rice and chicken and stir for another 1 min.

7When serve in bowl sprinkle the parsley on the top.
